Pizzadough

It is time for some pizza! Some people buy their doughs ready-made, but I believe it is easier, quicker and better to make it yourself.
I use 2 kinds of flour, normal wheat flour (you can use wholegrain) and the Italian tipo 00 for a refined texture. You will need the following ingredients to prepare the dough:

(3-4 persons)
300g Tipo 00 Flour
200g All-Purpose Flour
10-12g Yeast
2tbs Olive Oil
½tbs Salt
3dl Luke-Warm Water
A Pinch of Sugar

Break up the yeast into the lukewarm water (Approx 32-35 C) and add the sugar. In a different bowl mix all the dry ingredients. Add the dry ingredients and the oil slowly to the yeast-mix while stirring with one hand (keep the other clean in case you need to add some flour or water later on).
When the mix starts to come together whip it out of the bowl and knead the dough for roughly 15 minutes.
Roll into a tight ball and place in a bowl with a splash of olive oil and covered by a wet towel to keep the dough moist. Leave overnight in the fridge or for 2 hours in a hot place to rise.
When risen divide the dough into fist-sized balls and roll out to form the pizzas.
