Leftovers Deluxe 2 - Chunky Hash (Food)

Time for some more leftovers! This is a great recipe for using the extra meat from the Sunday-roast, that didn't get eaten. When I cook my Sunday-roast, I always cook more than I can eat which provides me with delicious leftovers for days to come. It's cheap and tastes awesome. Sometimes it even tastes better than the actual roast!


For the chunky Hash (Food :) ) you'll need:

(4 persons)
4-600g of leftover Meat (Pork, Beef or Chicken)
500g of Potatoes (Parboiled, possible from the day before)
4 big Onions
1 tsp Sugar
1 tbs English Sauce
1 tbs Worcester Sauce
Salt and Pepper
Olive Oil
Butter
Optional: Pickled Beetroot
Optional: 4 eggs

Cut the onions into chunky bits, and fry in butter until golden and tender, season with salt, pepper, sugar, English sauce and Worcester sauce. Put aside in a heatproof dish in a low oven. Cut the parboiled potatoes into chunky bits and fry at high heat in a mixture of olive oil and butter until golden, season to taste. Put aside in the oven. Fry the roughly chopped meat at high heat in olive oil and mix it together with the onions and potatoes. Serve with a fried egg and pickled beetroot.
